A List of Our Seasonal Ferments
CrunchyKraut
CrunchKraut, one of our flagship products, is named as such to convey the 'crunchy-ness' of raw/fresh sauerkraut vs. the 'mushy stuff' that many of us dreaded growing up. This variety is sweeter than it's cabbage-only cousin, PureKraut, due to the addition of carrots, onions, and garlic. It's a popular choice with kids!
KoreanKimchi
KoreanKimchi is our take on the classic Korean-fermented napa cabbage flavored with Korean gochu chili, anchovy sauce, ginger, and garlic.
GarlicSambal
GarlicSambal is one of our  most addicting ferments, which is made with red-ripe jalapeno peppers and loads of garlic.
PureKraut
PureKraut is our classic fermented cabbage-only sauerkraut.
UmamiOnions
UmamiOnions is a one-of-a-kind unique Beyond Pickles product made with fermented red onions and infused with the smoky taste of 'morita' peppers - a Mexican-style chipotle pepper made from red jalapenos.
KimchiPeas (available 2023)
KimchiPeas is another unique fermented condiment made with sugar snap pea pods (instead of napa cabbage) and flavored with the same kimchi flavor of our KoreanKimchi.
TheWholeBeet
TheWholeBeet captures the essence of the entire beet plant - both the bulbs and the greens - to give you that earthy beet taste and a flavor that makes everything better. Small-farm grown in the magical volcanic soils of Eastern Washington.
DillPickles
DillPickles are simply diill, garlic, and 'full sour' fermented cucumbers, family-grown in the Yakima Valley.
BeetKraut
Sauerkraut + Beets from small Eastern Washington farms + onions and garlic for an extra umami punch.
DillRelish
Julienne-cut relish (think small french fries) made from our DillPickles - full of garlic and dill flavors
SpicyOkra
Organic Okra grown by Schreiber & Son's organic farm - our okra has a taste of garlic and dill, and also some red chili for some heat.
TurniPickles
This is a chunky relish-style ferment made with horse-assisted Hakurei turnips grown by Hayshaker Farm. Similar to the classic Lebanese condiment, these diced turnips (and a hint of beets) are flavored with garlic and bay leaf.
YellowSambal
Our newest ferment, YellowSambal was born in October 2022 and is made with spicy organic yellow chilies grown by Royal Produce in Royal City, Washington. It is similar in texture to our GarlicSambal ~ a paste of yellow chilies and loads of garlic.
